Great hint. Nice to see there is a way to add in windows, but it comes with its own set of flaws. The window has to be opened. It can be not be closed (via cmd+W) and can not be minimized. Or at least that was my milage when testing - tested with Mail and NetNewsWire.
Option + CMD + click on a running application in the Dock (that is being shown in Exposé) will remove the application from Exposé (doing so on all shown applications will quit Exposé).
also works when expose is activated via f10.
the remove (and then the add) also work in all applications mode (eg as activated by f9).
This means there's a chance they were there before 10.6, though no guarantees.

Great tips. Didn't know this can be done on Expose. Been using it, but never explore :p
The add on to this is that Option-Command-Click will remove an application. It works for Exposé when using it in the manner described by the original hint poster or when first invoking Exposé with the all-windows method.
Using Spaces, this seems to only work for applications which have windows open in the same Space.
